Mayonaise - lactonesa

02 Aug 2010

There are several ways to make mayonaise and this is one of them.

Ingredients:

  • 1 Measurement of milk (whole cow or soy, to taste).
  • 2 Measures of oil (sunflower or olive oil, but soft).
  • Juice of half a lemon (for a glass of milk) or to taste.
  • A pinch of salt.

Preparation:

Pour the milk and salt in a blender and turn on low speed.

From the hole in the lid of the blender up and running we'll be bringing the oil very slowly to mix well with milk.

When finished with the oil, proceed to pour the lemon, always slowly and we beat a few seconds. You should end up with classical consistency of mayonnaise. If you want more dense, it can slightly increase the amount of oil or prolong the time it is in the mixer.

If you want to put garlic, do it at first, with milk and pour the oil until the garlic is completely crushed and mixed with milk.

Here you have a video that illustrates this very well.

Bechamel sauce

July 11, 2010

This is a bechamel sauce recipe slightly modified to be healthier and healthier, but just as rich and flavorful.

Ingredients for 4:

  • 1/2 liter of soy milk
  • 50 g flour
  • 50 g of olive oil
  • 1 pinch of nutmeg
  • pepper
  • salt

Preparation:

Pour the oil in a nonstick skillet or saucepan and add the flour until lightly toasted.

Gradually add milk and stir continuously with rods to prevent lumps. Repeat until you have finished the milk and get a thick sauce (Cooking Throughout the bechamel, keep the heat low).

Season with salt, pepper and nutmeg. Remover.

If clumps are seen at the end, there's a trick: Beat with a mixer (or blender), but with practice will not be necessary.

If desired depending on the bechamel thicker or thinner, simply increase the amount of flour and reduce the amount of milk or do the reverse, respectively.

Guacamole

Guacamole with nachos

Here is a quick and easy recipe to prepare the famous "Guacamole."

Ingredients:

  • 2 medium avocados
  • 1 tomato (not great)
  • 1/2 or 1 Onion Chive
  • juice of ½ lemon
  • salt
  • hot sauce (for which you like)
  • one tablespoon of virgin olive oil

Items needed:

  • Knife
  • Chopping
  • Mixer / Multiquick

Preparation:

The process is very simple:

You have to peel the avocados and remove the bone.

Peel tomatoes. To peel tomatoes easily, you can put a few seconds in a bowl of water at 100 ° C (just as he has begun to boil, but put out the fire). You see as the skin begins to crack and then you have to peel: will very easily. A curious point is to remove the seeds to avoid that feeling of acidity that gives tomatoes, but not necessary.

Put the avocado, tomato, oil, onion, lemon juice, salt and hot sauce (if applicable) in the bowl of the mixer. The oil is to flavor and smooth texture, so you do not have to spend. The lemon, plus give you a taste very nice, keep the guacamole because of its antioxidant properties, so when we put in the fridge will not turn black.

Beat all until desired consistency and ready.

This sauce is ideal with dippas, nachos, used for salad dressing, make snacks, etc ... your imagination knows how to combine ;-) It's a very fresh and tasty sauce.
